Ingredients
- 1 Cauliflower (about 1.4 pounds)
- 1 medium Onion chopped
- 2 cups Mozzarella – Cheddar Blend (shredded)- or similar I recommend this one (amazon)
- 1 cup Sour Cream
- 9 oz Bacon (thick cut)
- 1 tablespoon Seasonings
How To Make
Follow these simple steps:
Step 1
Preheat the oven to 400°F.
Step 2
Wash the cauliflower and then break it into florets. Then, boil them for 3-5 minutes and drain well.
Step 3
Add them to a baking dish – this time I used an 8×8 one. Then, add the sour cream and half of the shredded cheese. Mix well.
Step 4
Lightly cook the bacon in a pan with the chopped onion. Add on top of the cauliflower and then top with the herbs and the remaining shredded cheese.
Step 5
Bake for about 25 minutes. Remove from the oven and let it cool for 20-30 minutes. Enjoy!
Tips
1. Don’t Skip Draining the Cauliflower
After you boil the cauliflower florets, make sure you drain them really well and let them sit for a few minutes to get rid of extra water.
If there’s too much water left on the cauliflower, your casserole will end up watery and won’t have that nice, creamy texture you want.
The best way to do this is to drain the cauliflower in a colander, then spread the pieces out on a clean kitchen towel or paper towels for about 5 minutes.
You can even gently pat them dry. This extra step might seem like it’s not important, but it makes a huge difference in how your final dish turns out.
2. Don’t Overcook the Cauliflower
When you’re boiling the cauliflower florets, you only want to cook them until they’re just tender when you poke them with a fork. This should take about 3-5 minutes depending on how big your pieces are.
If you cook them too long, they’ll get mushy and fall apart when you mix them with the other ingredients.
The cauliflower will continue cooking in the oven, so it’s better to undercook it slightly at this stage than to overcook it.
You want the pieces to hold their shape in the final casserole, not turn into mush. Start checking them after 3 minutes by poking a few pieces with a fork – they should give a little but still have some firmness to them.

Frequently Asked Questions
What can I substitute for sour cream?
Greek yogurt is probably the best replacement – use the same amount as the sour cream called for, and make sure it’s plain, full fat Greek yogurt for the best texture and flavor.
Cream cheese also works great, but you’ll need to soften it first and maybe thin it out with a little milk or cream to make it easier to mix.
