Gluten Free Loaded Cauliflower & Bacon Casserole

Easy gluten free loaded cauliflower casserole with bacon, cheese and sour cream. Perfect keto comfort food ready in under an hour with just 6 simple ingredients.

Ingredients

  • 1 Cauliflower about 1.4 pounds
  • 1 medium Onion chopped
  • 2 cups Mozzarella – Cheddar Blend  (shredded)- or similar I recommend this one (amazon)
  • 1 cup Sour Cream
  • 9 oz Bacon thick cut
  • 1 tablespoon Seasonings

Instructions

  • Preheat the oven to 400°F.
  • Wash the cauliflower and then break it into florets. Then, boil them for 3-5 minutes and drain well.
  • Add them to a baking dish – this time I used an 8×8 one. Then, add the sour cream and half of the shredded cheese. Mix well.
  • Lightly cook the bacon in a pan with the chopped onion. Add on top of the cauliflower and then top with the herbs and the remaining shredded cheese.
  • Bake for about 25 minutes. Remove from the oven and let it cool for 20-30 minutes. Enjoy!
