Gluten Free Peanut Butter Bars

Peanut butter desserts are always a hit, and these gluten free peanut butter bars prove that point perfectly. They’re rich, creamy, and have that chocolate topping that makes everything better.

Gluten Free Peanut Butter Bars

The best part is how simple they are to put together. When you’re looking for gluten free desserts, it’s nice to find recipes that don’t require a long list of strange ingredients.

This recipe uses almond flour as the base, which gives the bars a great texture. The peanut butter adds protein and that nutty flavor we all love. Together with melted butter, these ingredients create a base that’s both tasty and satisfying.

The chocolate topping is what really makes these bars special. It’s smooth and melts in your mouth.

You can use regular chocolate chips or sugar free ones if you prefer. Either way, the combination of peanut butter and chocolate never gets old.

What Makes This Recipe Special

No Baking Required: You don’t need to turn on your oven for this recipe, which makes it perfect for hot summer days or when you want a quick dessert.

Everything comes together at room temperature, and the freezer does all the work of setting the bars.

Only 5 Simple Ingredients: This recipe uses just five basic ingredients that you can find at any grocery store. You need almond flour, butter, peanut butter, chocolate chips, and a little more butter for the topping. That’s it!

Perfect Peanut Butter Texture: The almond flour creates the perfect base that’s not too soft and not too hard. It holds together well when you cut the bars but still has a nice creamy texture when you bite into it.

The peanut butter stays smooth and doesn’t get grainy or separated like it can in some recipes.

Ingredients

  • 1 cup Almond Flour
  • 1/2 cup Butter (melted)
  • 1/2 cup Peanut Butter (creamy)

For The Topping

  • 3/4 cup Chocolate Chips (you can use sugar free ones instead)
  • 1 tablespoon Butter

How To Make

Follow these simple steps:

Step 1

Line a baking dish (I used a 7×7 one) with parchment paper.

Step 2

Next, melt the butter in a microwave safe bowl and let it cool for 2-3 minutes.

Step 3

Mix in the almond flour and peanut butter. Continue until well combined.

Step 4

Transfer to the prepared pan. Spread it evenly. Place in the freezer for 30 minutes.

Step 5

Make the top layer by placing the chocolate and butter in a microwave-safe bowl. Microwave in 20-second intervals until melted.

Then, spread over the peanut butter layer evenly, and place in the freezer for at least 45 minutes.

Tips

1. Let Your Butter Cool Down First

After you melt the butter in the microwave, don’t rush to mix it with the other ingredients right away.

Hot butter will make your peanut butter too runny and could even start to cook the almond flour, which will change the texture of your bars.

Let the melted butter sit for about 2-3 minutes until it’s warm but not hot to the touch. You can test this by dipping a clean finger into it – it should feel warm like bath water, not burning hot.

2. Press the Base Layer Really Firmly

When you put the peanut butter mixture into your lined pan, don’t just spread it around gently. You need to press it down firmly and evenly to create a solid base that won’t fall apart when you cut the bars later.

Use the back of a spoon or a flat measuring cup to really pack it down. Pay special attention to the corners and edges, making sure they’re just as firmly pressed as the center.

If you don’t press hard enough, your bars will be crumbly and might break apart when you try to remove them from the pan.
