- 8 oz Mascarpone Cheese
- 1 cup Heavy Whipping Cream
- 1/3 cup Powdered Sugar
- 1 cup Strong Brewed Coffee, cooled
- 2 tbsp Coffee Liqueur
- 12 Gluten Free Ladyfinger Cookies
- 2 tbsp Cocoa Powder
In a large bowl, beat mascarpone cheese, heavy cream, and powdered sugar together until smooth and fluffy, about 2-3 minutes.
Mix the cooled coffee with coffee liqueur in a shallow bowl.
Break gluten free ladyfinger cookies into pieces and quickly dip them in the coffee mixture.
Layer the soaked cookie pieces in the bottom of 6 small serving cups or glasses.
Spoon the mascarpone cream mixture over the cookies, filling each cup about halfway.
Add another layer of coffee-soaked cookies, then top with remaining mascarpone cream.
Dust generously with cocoa powder and refrigerate for at least 3 hours before serving.
