Ingredients

  • 8 oz Mascarpone Cheese
  • 1 cup Heavy Whipping Cream
  • 1/3 cup Powdered Sugar
  • 1 cup Strong Brewed Coffee, cooled
  • 2 tbsp Coffee Liqueur
  • 12 Gluten Free Ladyfinger Cookies
  • 2 tbsp Cocoa Powder

Instructions

  • In a large bowl, beat mascarpone cheese, heavy cream, and powdered sugar together until smooth and fluffy, about 2-3 minutes.
  • Mix the cooled coffee with coffee liqueur in a shallow bowl.
  • Break gluten free ladyfinger cookies into pieces and quickly dip them in the coffee mixture.
  • Layer the soaked cookie pieces in the bottom of 6 small serving cups or glasses.
  • Spoon the mascarpone cream mixture over the cookies, filling each cup about halfway.
  • Add another layer of coffee-soaked cookies, then top with remaining mascarpone cream.
  • Dust generously with cocoa powder and refrigerate for at least 3 hours before serving.
