Instructions
Preheat oven to 350°F (175°C). Line a 8x4 loaf pan with parchment paper.
Whisk together the almond flour, baking powder, baking soda, xanthan gum, and salt.
In another large bowl, whisk the egg yolks, sour cream, and melted butter until smooth and pale. Stir in the dry ingredients - the dough will be thick at this stage.
In a separate clean glass bowl, beat the egg whites to stiff peaks. Gently fold 1/3 of the egg whites into the dough to loosen it up. Then, fold in the remaining whites.
Pour into the pan. Bake for 40-45 minutes. The top should be golden brown and a toothpick should come out clean
Let it cool for 30 minutes then slice and serve. Enjoy!
