Gluten Free Sour Cream Sandwich Bread

Ingredients

  • 2 cups Super Fine Almond Flour I recommend this one (amazon)
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Xanthan Gum
  • 1/2 tsp Sea Salt
  • 3 Large Eggs (Separated)
  • 6 oz Sour Cream
  • 3 tbsp Butter (melted then cooled)

Instructions

  • Preheat oven to 350°F (175°C). Line a 8x4 loaf pan with parchment paper.
  • Whisk together the almond flour, baking powder, baking soda, xanthan gum, and salt.
  • In another large bowl, whisk the egg yolks, sour cream, and melted butter until smooth and pale. Stir in the dry ingredients - the dough will be thick at this stage.
  • In a separate clean glass bowl, beat the egg whites to stiff peaks. Gently fold 1/3 of the egg whites into the dough to loosen it up. Then, fold in the remaining whites.
  • Pour into the pan. Bake for 40-45 minutes. The top should be golden brown and a toothpick should come out clean
  • Let it cool for 30 minutes then slice and serve. Enjoy!
