Ingredients
  

  • 1 cup Gluten Free All-Purpose Flour
  • 1/3 cup Tapioca Starch
  • 1/2 cup Shredded Mozzarella Cheese
  • 2 tbsp Finely Grated Parmesan Cheese
  • 1 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Salt
  • 3 tbsp Olive Oil
  • 3 tbsp Cold Water
  • 1/4 cup Mini Pepperoni, finely chopped

Instructions
 

  • Preheat your oven to 350F and line two large baking sheets with parchment paper.
  • In a large bowl, whisk together the gluten free all-purpose flour, tapioca starch, italian seasoning, garlic powder, onion powder, smoked paprika, and salt. Toss in the mozzarella, parmesan, and chopped mini pepperoni, stirring until everything is evenly distributed.
  • Drizzle in the olive oil and cold water. Stir with a fork until the mixture starts to clump, then use your hands to press it together into a cohesive dough. It should hold together without being sticky.
  • Divide the dough in half. Place one piece between two sheets of parchment paper and roll it out to about 1/16 inch thickness. The thinner you roll, the crispier the crackers. Repeat with the second piece.
  • Remove the top parchment from each piece and score the dough into small squares using a pastry wheel or the edge of a spatula. Use a fork to poke a hole in the center of each square.
  • Transfer the parchment with the scored dough onto the baking sheets. Bake for 14 to 17 minutes, rotating the pans halfway through, until the crackers are golden brown and firm to the touch.
  • Let the crackers cool completely on the pans before breaking apart along the scored lines. They will become extra crispy and snappy once cooled. Serve with warm marinara sauce for dipping.
