- 1 1/2 cups Almond Flour
- 1/2 cup Finely Grated Parmesan Cheese
- 2 tbsp Basil Pesto
- 1 tbsp Tapioca Starch
- 1 Large Egg White
- 1/4 tsp Salt
- 1/4 tsp Garlic Powder
- 1/4 tsp Black Pepper
- 2 tbsp Pine Nuts, finely chopped
- Flaky Sea Salt, for topping
Preheat your oven to 325F and line a large baking sheet with parchment paper.
In a large bowl, combine the almond flour, parmesan, tapioca starch, salt, garlic powder, and black pepper. Whisk until everything is evenly distributed.
Add the basil pesto and egg white. Stir with a fork and then knead with your hands until a smooth, slightly green-tinted dough forms. Fold in the chopped pine nuts.
Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thickness. Keep the thickness as even as possible for uniform baking.
Remove the top parchment and score the dough into small squares or rectangles. Sprinkle with flaky sea salt and gently press it in.
Bake for 15 to 18 minutes, until the crackers are golden brown on the edges and feel firm and dry to the touch in the center.
Let the crackers cool completely on the baking sheet before breaking them apart. They will be beautifully flecked with green, loaded with basil and parmesan flavor, and perfectly crispy. Amazing served alongside a charcuterie board.
