Ingredients
  

  • 2 cups Gluten Free Quick Oats
  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Instructions
 

  • Preheat the oven to 325F and line a baking sheet with parchment paper.
  • In a medium microwave safe bowl, gently melt the creamy peanut butter and maple syrup together for 30 seconds, then stir in the vanilla extract and salt.
  • Add the gluten free quick oats to the wet mixture and stir until the oats are entirely coated.
  • Scoop tablespoon sized portions of the mixture and press them tightly into small clusters with your hands.
  • Place the clusters on the baking sheet and bake for 12 to 15 minutes until lightly golden.
  • Let the clusters cool completely on the baking sheet to firm up and become crispy.
