Crush the gluten free chocolate sandwich cookies into fine crumbs using a food processor or place them in a sealed bag and crush with a rolling pin.
Mix the cookie crumbs with softened cream cheese until well combined and a dough forms.
Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 10 minutes.
Melt the chocolate chips with coconut oil in the microwave in 30-second intervals, stirring between each, until smooth.
Dip each ball into the melted chocolate using a fork, allowing excess to drip off. Place back on the parchment paper, add sprinkles if desired, and refrigerate for 15 minutes until set.
