Gluten Free Lemon Mug Cake

Ingredients

  • 3 tablespoons Almond Flour
  • 1 1/2 tablespoons Butter melted
  • 1 Egg large
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Coconut Flour
  • 1 tablespoon Granular Sugar/ Erythritol Granular Sweetener
  • 1/4 teaspoon Pure Vanilla Extract
  • 1 tablespoon Lemon Juice
  • Chocolate Chips to add on top – you can also use sugar free ones

Instructions

  • Add all the ingredients to a large microwave safe mug.
  • Using a small whisk-  mix everything until well combined and the mixture is smooth.
  • Stir in the lemon zest.
  • Cook in the microwave for 1 minute and 45 seconds. Then, remove it, add chocolate chips on top and serve.
  • My microwave is 1000 watts. If your microwave is different, adjust the time accordingly.
