- 1 1/2 cups Gluten Free Yellow Cornmeal
- 1/2 cup Gluten Free 1-to-1 Baking Flour
- 1 tbsp Granulated Sugar
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 tsp Cayenne Pepper
- 3/4 cup Buttermilk
- 1 large Egg
- 3 Green Onions, finely chopped
- Vegetable Oil for frying
In a large bowl, whisk together gluten free cornmeal, gluten free flour, sugar, baking powder, salt, and cayenne pepper.
In a separate bowl, whisk together buttermilk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped green onions. Let the batter rest for 10 minutes.
Pour vegetable oil into a heavy-bottomed pot or Dutch oven to a depth of 3 inches. Heat to 350F, using a thermometer to monitor the temperature.
Using two spoons or a small cookie scoop, carefully drop rounded tablespoons of batter into the hot oil, working in batches of 5 to 6 to avoid crowding. Fry for 2 to 3 minutes, turning occasionally, until deep golden brown on all sides.
Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Serve hot with tartar sauce or remoulade.
