Equipment

  • 9x5 inch loaf pan
  • electric mixer
  • wire rack

Ingredients

  • 2 cups Gluten Free Oat Flour
  • 1 cup Gluten Free All-Purpose Flour
  • 2 tsp Instant Yeast
  • 1 1/2 tsp Salt
  • 3 tbsp Honey
  • 1 1/4 cups Warm Milk
  • 3 Large Eggs
  • 1/4 cup Melted Butter
  • 1 tsp Apple Cider Vinegar
  • 2 tbsp Rolled Oats

Instructions

  • In a large bowl, combine oat flour, gluten free flour, yeast, and salt. Mix well to distribute the yeast evenly.
  • In another bowl, whisk together honey, warm milk, eggs, melted butter, and apple cider vinegar until smooth.
  • Pour wet ingredients into dry ingredients and beat with a mixer for 2 minutes until a thick, smooth batter forms. The consistency will be more like thick cake batter than traditional bread dough.
  • Grease a 9x5 inch loaf pan and pour in the batter. Smooth the top and sprinkle with rolled oats. Cover and let rise in a warm place for 45-60 minutes until doubled.
  • Preheat oven to 375°F. Bake the risen loaf for 40-45 minutes until golden brown and sounds hollow when tapped.
  • Cool in pan for 10 minutes, then transfer to a wire rack. Let cool completely before slicing for the perfect sandwich texture.
