Gluten Free Frittata

Delicious gluten-free frittata with crispy bacon and melted cheese. Low-carb, high-protein breakfast ready in under 30 minutes. Family-friendly!

Ingredients

  • 1 cup Mushrooms – sliced
  • 6 Eggs
  • 4 oz Bacon chopped
  • 1/4 cup Heavy Cream
  • 1 1/2 tablespoons Butter
  • 4 oz Spinach
  • 1 cup Cheddar Cheese shredded –  I recommend this one (amazon)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  • Preheat the oven to 350°F. Place a cast iron pan over high heat.
  • Add the bacon and cook for about 4-5 minutes. Then, add the butter and mushrooms and saute them for 3-4 more minutes.
  • Add the spinach and cook until it wilts – it should take approx about 2-3 minutes. Then, turn off the heat and add the shredded cheddar cheese on top.
  • Add the eggs, cream, black pepper, and salt to a medium mixing bowl and whisk.
  • Pour the mixture into the pan. Bake in the oven for 18-20 minutes. Slice and enjoy!
