Gluten Free Dark Chocolate Sea Salt Truffles

Ingredients

  • 10 oz High Quality Dark Chocolate
  • 1/2 cup Heavy Cream
  • 1 tsp Vanilla Extract
  • 1/4 cup Cocoa Powder
  • 1 tsp Flaky Sea Salt

Instructions

  • Finely chop the dark chocolate and place it into a medium heat-proof bowl.
  • Heat the heavy cream in a small saucepan until it just begins to simmer, then immediately pour it over the chopped chocolate.
  • Let the mixture sit undisturbed for 3 minutes, then add the vanilla extract and stir gently until completely smooth and glossy.
  • Cover the bowl and refrigerate for 2 hours, or until the chocolate mixture is firm enough to scoop.
  • Using a small spoon, scoop out small bite-sized portions and quickly roll them into balls using your hands.
  • Roll each truffle in cocoa powder to coat, and press a tiny pinch of flaky sea salt into the top of each one.
