Start by preheating the oven to 350°F. Then, line a loaf pan (I used a 9×5-inch one) with parchment paper.
Add the cottage cheese, egg, and egg whites to a blender. Blend everything until smooth.
Add the almond flour and baking powder to a large bowl. Mix them well. Then pour in the cottage cheese mixture and mix until well combined. Take your time and do it by hand.
Pour the batter into the loaf pan and bake for 60 minutes.
Remove the bread from the oven. Let it cool for 1 hour, then remove from the loaf pan and slice.
