- 14 oz Dark Chocolate Chips
- 1/2 cup Unsalted Butter
- 1/4 cup Powdered Sugar
- 1 cup Gluten Free Vanilla Wafer Cookies
- 1/2 cup Toasted Almonds
- 1/2 cup Powdered Sugar for coating
Melt chocolate chips and butter together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Stir in 1/4 cup powdered sugar and let the mixture cool for 10 minutes.
Roughly crush the gluten free vanilla wafers into chunks and chop toasted almonds, then fold both into the chocolate mixture.
Lay out a large piece of plastic wrap and pour the chocolate mixture onto it, shaping it into a log about 10 inches long.
Wrap tightly and twist the ends like a candy wrapper, then refrigerate for at least 4 hours until completely firm.
Unwrap the log and roll it in powdered sugar until completely coated.
Slice into rounds and serve as an elegant no-bake chocolate dessert.
