Gluten Free Chocolate Salami

Ingredients

  • 14 oz Dark Chocolate Chips
  • 1/2 cup Unsalted Butter
  • 1/4 cup Powdered Sugar
  • 1 cup Gluten Free Vanilla Wafer Cookies
  • 1/2 cup Toasted Almonds
  • 1/2 cup Powdered Sugar for coating

Instructions

  • Melt chocolate chips and butter together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  • Stir in 1/4 cup powdered sugar and let the mixture cool for 10 minutes.
  • Roughly crush the gluten free vanilla wafers into chunks and chop toasted almonds, then fold both into the chocolate mixture.
  • Lay out a large piece of plastic wrap and pour the chocolate mixture onto it, shaping it into a log about 10 inches long.
  • Wrap tightly and twist the ends like a candy wrapper, then refrigerate for at least 4 hours until completely firm.
  • Unwrap the log and roll it in powdered sugar until completely coated.
  • Slice into rounds and serve as an elegant no-bake chocolate dessert.
