Gluten Free Chocolate Chip Scones

Ingredients

  • 8 oz Almond Flour
  • 2 Eggs
  • 1.5 oz Coconut Flour
  • 4 oz Butter melted
  • 1/3 cup Granulated Sugar I recommend using Swerve Sweetener to make it low carb
  • 1/2 cup Chocolate Chips I recommend using sugar free ones
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt

Instructions

  • In a medium bowl, combine the coconut flour, almond flour, salt, and baking powder. Mix well until evenly combined.
  • In a separate bowl, combine the melted butter, sugar or sweetener, and vanilla extract. Using a hand mixer, beat for 2-3 minutes until well combined.
    Add the eggs and mix well. Gradually add the flour mixture, and mix until a cohesive dough forms.
  • Fold in the chocolate chips using your hands.
  • Form the dough into a ball. Place it on a baking sheet lined with parchment paper. Press it down and create a flat disc (resembling a pizza shape). Use a pizza cutter or knife, and score the dough into wedges.
  • Bake for about 15-18 minutes until they golden brown. That’s it! Enjoy. Yummy!
