- 1 tbsp Unsalted Butter
- 1 Medium Yellow Onion, finely diced
- 1/4 tsp Salt (for onion)
- 1 1/2 cups Almond Flour
- 1/2 cup Finely Shredded Gruyere Cheese
- 2 tbsp Tapioca Starch
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Fresh Thyme Leaves
- 1 Large Egg White
Melt the butter in a skillet over medium-low heat. Add the diced onion and 1/4 teaspoon salt. Cook, stirring occasionally, for 15 to 20 minutes until the onions are deep golden brown and jammy. Let them cool completely before using.
Preheat your oven to 325F and line a large baking sheet with parchment paper.
In a large bowl, combine the almond flour, shredded gruyere, tapioca starch, salt, black pepper, and thyme leaves. Add the cooled caramelized onions and the egg white.
Stir with a fork, then knead with your hands until a smooth dough forms. The onions should be distributed throughout. Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thickness, keeping it as even as possible.
Remove the top parchment and score the dough into small squares or rectangles. Poke each cracker once with a fork.
Bake for 16 to 20 minutes, until the crackers are golden brown and the edges are deeply toasted and crisp. The gruyere will bubble slightly and add beautiful golden spots.
Let the crackers cool completely on the baking sheet before breaking them apart. The sweet onion and nutty gruyere flavor deepens as they cool. Store in an airtight container at room temperature.
