Line a baking sheet with parchment paper.
In a bowl, mix Greek yogurt with honey and vanilla extract until smooth and well combined.
Pour the yogurt mixture onto the prepared baking sheet and spread it into an even layer about 1/4-inch thick.
Scatter mixed berries, gluten free granola, and mini chocolate chips evenly over the yogurt layer, pressing them in slightly.
Freeze for at least 2 hours until completely solid, then break into pieces and serve immediately. Store leftovers in the freezer in an airtight container.
