The Mix-ins
- 6 strips Bacon (thick cut, crispy)
- 6 oz Feta Cheese Block (broken into chunks)
- 2 tbsp Fresh Chives / Green Onions, chopped
The Bread Batter
- 2 ½ cups Super Fine Almond Flour I recommend this one (amazon)
- ½ tsp Xanthan Gum
- 1 tbsp Baking Powder
- ½ tsp Garlic Powder
- ½ tsp Black Pepper
- 4 large Eggs
- 1/3 cup Olive Oil
- 1/3 cup Sour Cream
Preheat oven to 350°F (175°C). Line your loaf pan with parchment paper. Cook bacon until dark and crispy. Drain on paper towels. Let cool completely.
Whisk almond flour, xanthan gum, baking powder, garlic powder, and pepper in a large bowl.
In a separate bowl, whisk eggs, olive oil, and sour cream until smooth.
Pour the wet mix into the dry mix. Stir well. The batter will be thick. Gently fold in the feta chunks, cooled bacon, and chives.
Spoon the thick batter into the loaf pan and bake for 50–60 minutes.
Let it cool in the pan for about 20-30 minutes. I recommend moving to a wire rack to cool completely.
