Ingredients
  

The Mix-ins

  • 6 strips Bacon (thick cut, crispy)
  • 6 oz Feta Cheese Block (broken into chunks)
  • 2 tbsp Fresh Chives / Green Onions, chopped

The Bread Batter

  • 2 ½ cups Super Fine Almond Flour I recommend this one (amazon)
  • ½ tsp Xanthan Gum
  • 1 tbsp Baking Powder
  • ½ tsp Garlic Powder
  • ½ tsp Black Pepper
  • 4 large Eggs
  • 1/3 cup Olive Oil
  • 1/3 cup Sour Cream

Instructions
 

  • Preheat oven to 350°F (175°C). Line your loaf pan with parchment paper. Cook bacon until dark and crispy. Drain on paper towels. Let cool completely.
  • Whisk almond flour, xanthan gum, baking powder, garlic powder, and pepper in a large bowl.
  • In a separate bowl, whisk eggs, olive oil, and sour cream until smooth.
  • Pour the wet mix into the dry mix. Stir well. The batter will be thick. Gently fold in the feta chunks, cooled bacon, and chives.
  • Spoon the thick batter into the loaf pan and bake for 50–60 minutes.
  • Let it cool in the pan for about 20-30 minutes. I recommend moving to a wire rack to cool completely.
