Gluten Free 3 Ingredient Cookies

Make amazing gluten free cookies with just 3 simple ingredients. These almond flour cookies are naturally low carb and high protein.

Ingredients

  • 2 cups Almond Flour (I recommend this one – amazon)
  • 1 cup Powdered Sugar or Powdered Sweetener
  • 2 large Eggs

Instructions

  • Preheat your oven to 370°F .Then,  In a large bowl, combine almond flour and powdered sugar / sweetener. Mix well.
  • Separate eggs (save yolks for later). Add the egg whites to the flour mixture. Knead until dough forms.
  • Roll the dough into small balls and place on parchment lined baking sheet. Press down and flatten them. Use a fork to create holes.
  • Whisk the egg yolks and brush over cookies. Bake for 10-12 minutes until golden brown.
  • Let the cookies cool on baking sheet for 10  minutes before serving.
