Cool the Onions Completely
This is the most important step people rush through. If the onions are even a little warm when you mix them into the dough, the almond flour and gruyere will get oily and the dough will be too soft to roll out.
Spread the caramelized onions on a plate so they cool faster. Putting them in a bowl means the ones in the middle stay warm for a long time.
You want them fully at room temperature before they go anywhere near the rest of the ingredients.
Grate the Gruyere as Fine as You Can
Use the smallest holes on your box grater for the gruyere. Big shreds won’t blend into the dough properly, and you’ll end up with uneven crackers that have melty cheese pockets in some spots and none in others.

Finely shredded gruyere melts evenly during baking and gives every cracker that nutty, golden cheese flavor. It also makes rolling the dough much easier because the texture stays smooth.
If the cheese is sticking to your grater, pop it in the freezer for 10 minutes first. Cold gruyere grates much cleaner.
Roll the Dough Evenly to 1/8 Inch
Almond flour dough doesn’t have gluten holding it together, so it bakes differently than regular cracker dough. If some parts are thicker than others, the thin parts will burn while the thick parts stay soft and chewy.
Rolling between two sheets of parchment is the move here. It keeps the dough from sticking to everything and lets you peel the top sheet off cleanly for scoring.
If the dough cracks at the edges while rolling, just press it back together with your fingers. It’s very forgiving since the egg white and tapioca starch act as binders.
