  • 12 oz Gluten Free Spaghetti
  • 3 cups Cooked Chicken, shredded (from rotisserie chicken)
  • 4 tbsp Butter
  • 8 oz Cremini Mushrooms, sliced
  • 3 cloves Garlic, minced
  • 1/4 cup Rice Flour
  • 1 cup Chicken Broth (gluten free)
  • 1.5 cups Whole Milk
  • 1/2 cup Heavy Cream
  • 1 cup Shredded Parmesan Cheese, divided
  • 1 cup Frozen Peas
  • 1 tsp Dried Italian Seasoning
  • Salt and Pepper, to taste

How to Make

Step 1

Preheat the oven to 375 degrees F. Cook the gluten free spaghetti according to the package directions until just al dente. Drain and set aside.

Add the milk and heavy cream, continuing to whisk until the sauce is smooth. Bring to a gentle simmer and cook for 4 to 5 minutes, stirring often, until the sauce thickens enough to coat the back of a spoon.

Step 4

Remove from heat and stir in 3/4 cup of the parmesan cheese, the Italian seasoning, salt, and pepper. Fold in the shredded chicken, frozen peas, and cooked spaghetti until everything is coated in the creamy sauce.

Gluten free pasta is especially tricky with this because it goes from perfect to overcooked really fast. You want it slightly firm when you drain it.

Also, give it a quick toss with a tiny bit of olive oil after draining so the noodles don’t clump together while you make the sauce.

Cook the Mushrooms Without Crowding Them

Spread the mushrooms out in a single layer in the skillet. If you pile them on top of each other, they’ll steam instead of browning, and you’ll end up with soft, pale mushrooms that don’t add much flavor.
